Organizing thoughts is helpful

So basically I’ve never tried to write a longer multi-chapter story. Usually it is limited to brief anecdotes at best. Now I am trying to write longer things. After a few chapters I realized: remembering all of this from the top of my head is going to suck. So I stopped writing for a while. Now I am doing it again, but this time I am making separate documents for world building. These separate documents contain details of characters and different factions, all good. TLDR; Make a wiki page or something to describe your characters and world before diving into the little details. So how do you organize your thoughts before / during writing?
