How do you keep an interesting plot?

My story is getting boring. I’ve tried a lot of things to keep it interesting. I added more characters to create more drama, which makes the book incredibly complex and confusing. Trying to do more research on historical wars (I’m writing a fantasy), end up unconsciously copying what happened word for word. Trying to add twists, they end up being ridiculously predictable and somewhat mediocre. I also tried taking a break for a few days. I guess you can deduce what happened here. I feel like if it gets boring for me, it will be hundreds of times worse for the reader. How did you all come up with your own interesting plots? (Apart from daydreaming the whole thing).
