How often do you rewrite your story?

Moving from a more omniscient narrator providing insight into people’s thoughts, feelings, and pasts, then rewriting from a more limited perspective focusing only on the actions of the story seeing how the story changes without certain details and scenes. I’ve clearly never taken classes, I don’t know the names of the writing styles I’m referring to, but how often do you change your stories in this way, essentially rewriting the same story in different ways?
